Another Birthday, Another Cake | Tasty Tuesdays #10



Hello!

On Friday it was my wonderful friend/academic sister/housemate/general good person Jenny's 19th birthday. And being the cute little house that we are, a baking session was inevitable! 

While she was away at classes, I baked some cupcakes and decorated them with buttercream icing and percy pigs, then we surprised her when she came back with all of the cupcakes placed on a cake stand in the living room!

And they're really easy to make!

YOU WILL NEED:

For the cakes:
 225g slightly salted butter
225 caster sugar
225g self-raising flour
1 teaspoon vanilla extract
4 medium eggs

For the buttercream icing:
 225g unsalted butter
450g icing sugar
1 teaspoon vanilla extract

1. Preheat oven to 175c.
2. Beat the butter and sugar together until smooth, then sieve the flour and fold into the butter (hold the sieve quite high up to aerate the flour).
3. Mix together and add the eggs one at a time while whisking, then mix in the vanilla extract.
4, Spoon into cases in a baking tray and bake for 15-17 minutes (or until you can stick a knife in and have it come out clean!)
5. Leave to cool.

To make the icing, you beat the butter until soft, then add the icing sugar and 2 1/2 tablespoons of water a little at a time, before adding the vanilla extract. Then pipe (or, if like me you don't have piping tools, spread the icing onto the cake with a knife) and decorate!

And they taste sooo goood. Enjoy!
